A Collection of Christmas Cookies

It’s Cookie Week around here which simply means that we’re spending the whole week talking about cookies and only cookies. If you haven’t checked out Monday’s brand new biscotti recipe, hop on over and give it a read and add them to your cookie baking list too.

Christmas cookies are especially fun to make (and enjoy) because usually, they are little crunchy works of art. Here are a few of my very favorite holiday cookie recipes from the blog.

Soft Ginger Cookies

In my mind, gingerbread is the quintessential Christmas cookie. Deeply spiced and filled with molasses, they make you feel all warm and fuzzy inside. This is my favorite gingerbread cookie recipe, though a bit different from the traditional. They are heavy on the ginger (like a ginger snap), but soft and fluffy and rolled in crunchy sugar. I’ve also dipped them in cream cheese glaze or drizzled them with icing and they are always perfect. Plus, this blog post contains some tips and tricks from preventing cookie spread-age.

Brown Sugar Cookies with Rosemary Butter Glaze

I don’t love sugar cookies, so these were my solution to a classic sugar cookie cut-out. Thick and chewy, they are filled with brown sugar and then dunked in a simple rosemary glaze. They are simple, but elevated and would make a great holiday party dessert. They are also stamped with adorable little cookie stamps instead of the more traditional cookie cutter method for an added aesthetic.

Chamomile and Apricot Linzer Cookies

A Christmas cookie spread is not a Christmas cookie spread without Linzer cookies. Known by their famous little filled windows, Linzers feature two shortbread cookies sandwiched with jam. In this version, a floral chamomile shortbread cookie is filled with bright apricot jam. They are simple and adorable and you won’t be able to get enough of them.

Butterscotch Oatmeal Cookies with Hazelnuts and Espresso

This is one of my favorite recent blog recipes. A thick, chewy oatmeal cookie absolutely stuffed with butterscotch, toasted hazelnuts, and fragrant espresso. What could be better?

Hawaij Snickerdoodles

Hawaij is one of my very favorite fall/winter spices and I’m always looking for ways to incorporate it during the holiday season. It’s a Yemini spice blend featuring lots of ground ginger and cardamom, plus a few other warming spices. In this recipe, we incorporate it into a classic snickerdoodle to create a cooke reminiscent of Cinnamon Toast Crunch and I’m 100% into it. And an added bonus: any leftover hawaij is really fantastic stirred into your morning coffee.

White Chocolate Cherry Cookies with Rose Butter

This was one of the very first Christmas cookie recipes I developed and I created it for my momma. Floral rose petals are steeped into the butter and then the soft cookies are studded with white chocolate pieces and big dried red cherries.

Chocolate Espresso Crinkle Cookies

Winter snowballs but make them cookies. A fudgy, brownie like interior is packed with dark chocolate and espresso and then each cookie is rolled in powdered sugar for that just-took-a-dip-in-freshly-packed-snow look. A Christmas classic.

Fig Butter and Blue Cheese Rugelach

Ok here me out. Save this recipe for the first week of January when you are in holiday-recovery mode and need to use up all of the leftover scraps in your fridge. Charcuterie board leftovers turned cookies are what we have here. I used fig jam and blue cheese, but you can fill these little rugelach with any combination you can imagine.
